Why do so many vegan recipes call for a blender or a food processor?

It seems like every vegan formula I look up that requires mixing, but it doesn't say mix. It always says "in a blender/food processor". Is this merely for convenience, or is it necessary? Can I hand whisk/mix ingredients?
